Open the Mail app and click on the "Edit" button in the top right corner, then click on an email and click the button in the bottom right that says "Mark", then click on the "Mark as unread" button. Once you've done that, you can take your finger off of the "Mark" button. Give it a second and the "Mark as read" button will appear.
